We’ve had zucchini growing non-stop this summer. I can’t even estimate how many pounds of zucchini we’ve harvested from our one small plant. We’ve sautéed it, roasted it, grilled it, added it to soups, stews and sauces and it still keeps growing. I’d been running out of ideas on what to make with it, when someone suggested I should bake some zucchini bread.
More than 6 years ago, I put my name on the waitlist for a plot at my local community garden. I had just about forgotten that I was even on the list, when I received an email a few weeks ago with the subject line: “Plot #38 available”. The wait was finally over!
I have eaten a lot of banana bread throughout my life and have come to appreciate that no two banana breads are quite alike. Some are very dense and rich, others are light and fluffy.
